Recoil Beer Cheese Sauce
Using Payette’s Recoil IPA, this simple recipe will have everyone asking for the secret ingredient.
Prep time: 5 min.
Total time: 20 min.
Ingredients:
4 tbsp butter
4 tbsp flour
1 12 oz can of Recoil IPA
1 cup milk
1 lb cheddar cheese shredded
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Directions:
1. In a medium saucepan on medium-low heat, melt the butter, then add the flour and whisk until smooth. Cook, whisking, until mixture is bubbling about 3 minutes.
2. Gradually add beer and milk and whisk together until smooth. Let cook on medium-low for 4-5 minutes, stirring occasionally, until thickened. Remove from the heat, then add the cheese and whisk until melted and well incorporated.
Serve with your favorite chip, cracker or pretzel!

Beer and Bacon Brussel Sprouts
Any time of year, any occasion, this recipe is quick and always is a BIG hit!
Prep time: 10 min
Total time: 25 min
Ingredients:
2 lbs brussel sprouts
6oz thick cut bacon, chopped
1 shallot, peeled and sliced
1/2 tsp salt
12oz can Sofa King Sunny Hazy Pale Ale
1/4 tsp pepper
Pinch crushed red pepper
Directions:
Trim the ends of each brussel sprout and remove excess leaves. Cut the sprouts in half.
Place a large skillet over medium heat. Add the chopped bacon and sauté until crisp.
Add the sliced shallot. Sauté for another 2-3 minutes to soften.
Add the brussel sprouts. Stir and sear the sides of the sprouts for 4-5 minutes.
Pour the entire can of beer into the skillet. Add the salt and both peppers.
Bring to a simmer and lower the heat a little. Stir and simmer until the beer has reduced to a glaze and the sprouts are cooked through, about 12-15 minutes

North fork Lager and Smoked Cream Cheese
A simple and delicious crowd pleaser.
Prep time: 5 min.
Total time: 1.5 hours cooking
Ingredients:
8oz block of cream cheese
Seasoning of choice (we prefer Meat Church BBQ Holy VooDoo or Honey Bacon BBQ)
1 tbsp honey
North Fork Lager to enjoy alongside the delicious appetizer
Directions:
Cut cross-hatch pattern on top of cheese block
Coat all sides of cheese with seasoning
Place cheese on cooking sheet
Smoke for 90 minutes at 180° F degrees (Traeger preferred)
Pull off smoker and move cheese to serving tray. Drizzle with honey and serve with a fresh, crisp baguette and crackers.

Sofa King Sunny Smoked Wings
Full of radiant hop flavors, the Sofa King Sunny brings a vibrant taste and finish to this recipe.
Prep time: 10 min
Total time: 1 hr
Ingredients:
2.5 lbs chicken wings
1 12 oz can of Sofa King Sunny Hazy Pale Ale
1/4 tsp onion powder
1/2 tsp paprika
1/2 tsp chili powder
1/2 tsp salt
1 cup Franks Red Hot Sauce
1/2 stick butter
Directions:
1. In a gallon zip lock bag add the wings, beer and spices and refrigerate overnight or at least 8 hours.
2. Fire up smoker set to 250° F degrees, smoke chicken wings for 2 hours or until internal temperature hits 165° F degrees
3. In a saucepan melt the stick of butter and add the Franks Red Hot Sauce, and simmer for 5-10 min
4. Toss the wings in the sauce and enjoy!

North Fork Beer Cheese Jalapeño Poppers
Add a kick to your party with these easy and pop-able snacks!
Prep time: 15 min
Total time: 40 min
Ingredients:
6 jalapeños, halved lengthwise
1/2 cup of cream cheese
1/2 cup of shredded sharp cheddar
2 tbsp chopped scallions
12oz can of North Fork Lager
1 clove minced fresh garlic
5-6 strips thick-sliced bacon
Directions:
Heat beer in a saucepan over medium-high to a boil. Reduce heat to medium and simmer beer until reduced 1/4 cup.
Preheat oven to 400° F, cook bacon until desired crisp.
Combine reduced beer, cream cheese, cheddar, scallions, and garlic for the filling in saucepan.
Wash and cut jalapeño in half and remove the seeds.
Stuff jalapeño halves with filling; sprinkle bacon bits on top.
Cook poppers at 400° F until filling is bubbly and jalapeños are cooked - about 20 minutes & finish on broil until crisp, about 2 minutes.
Let cool for 5 minutes, then ENJOY!
Embers Mexican Chocolate porter Chili
An Embers Mexican Chocolate Porter will elevate any chili recipe, making it impossible to do it any other way.
Prep time: 20 min
Total time: 4-8 hr cook time
Ingredients:
1 lb ground beef
1 lb ground pork
1 large yellow onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
4 large garlic cloves, minced
1 tsp sea salt, plus more to taste
1 tsp freshly ground pepper
1 13.5 oz can black beans, drained, rinsed
1 13.5 oz can kidney beans, drained, rinsed
1 13.5 oz can pinto beans, drained, rinsed
1 28 oz can diced tomatoes
2 12 oz can Embers Mexican Chocolate
1/2 cup chili powder
2 tsp cumin
1 tsp cayenne optional
2 bay leaves
2 tbsp sugar
Directions:
1. In a large skillet set over medium-high heat, cook the beef, pork, onions, peppers, garlic, salt and pepper. Cook until meat is cooked through, 8-10 minutes.
2. Transfer the meat mixture, along with the beans, tomatoes, beer, chili powder, cumin, cayenne, bay leaves and sugar to a large crock pot. Stir to combine. Set on high for 4 hours or low for 8 hours.
3. Serve and enjoy!
